Well, today being Sunday I got up at 7.30am and started waking up the kids and rushed them around to get ready to their swimming proficiency test for the surf life. Yup, summer is almost here it means surf life saving lesson starts again! Thanks God the test didn’t take that long. Then we headed to our fave café near the river for a brunch. It was a bit windy so we opted to sit inside the café. After our tummy full, we headed home. Boys were doing their homework while I mucked around in the kitchen making this delicious slice. This slice is super easy to make and pretty quick. Well, tomorrow is Monday again so need to fill that lunchbox with something healthy and homemade. Here’s the recipe:
1/2 cup caster sugar (original recipe using 1 cup)
2 tbsp honey
2 cups rolled oats
3/4 cups desiccated coconut
1 cup corn flakes, lightly crushed
1/2 cup flakes almonds
1 tsp mixed spice
1/2 cup finely chopped dried apricots
1 cup mixed dried fruit
Pre-heat the oven to moderately slow 160C. Brush a shallow 20x30cm tin with oil or melted butter, line base sides with baking paper.
Combine butter, sugar, and honey in a small pan. Stir over low heat for 5 minutes , or until butter has melted and sugar has dissolved. Remove from heat.
Place oats, coconut, corn flakes, almonds, spice and fruit in a large mixing bowl, stir to combine and make a hole in the center. Pour butter and sugar mixture onto dry ingredients and combine thoroughly.
Press mixture into prepared tin. Using a sharp knife, score slice onto 18 fingers ( do not cut through). Bake for 45 minutes or until golden. Leave slice in pan for 15 minutes before turning out onto a board to cool. Cut when is cold. Store in airtight container for up to 3 days or so.
