bacon and egg pie

Hello there,

This morning I was in a bit of panic mode on. Why? Because, I just realized that I didn’t have any food for my boys’ lunch boxes! I only have couple slices of multi grain bread that were not so fresh, they were ok but I’d like to make sandwich with a fresh bread. 

So, I quickly look at my recipe book. And found an old recipe that’s quick enough to whip, and I got all the ingredients required. I was so happy hehee… Before picking up one kid from swimming I made this delicious bacon and egg pie. If you don’t eat bacon, you can use chicken or any other meat that you prefer. Or no meat at all, just add veggies or frozen veggies for emergency case. This recipe is very easy and perhaps you all are already familiar but I just want to share it here.

Here’s the recipe:


12 Bread slices, crust removed, flattened with a rolling pin

60grm melted

12 small eggs

12 Cherry tomatoes, quartered

Tasty cheese, grated

Paprika for dusting

This is how to make:

  • Pre heat oven 180c
  • Brush both sides of bread sliced with butter. Press into a 12 hole muffin pan. Bake 5 – 8 minutes to seal case and slightly colored.
  • Line bread cases with bacon. Break in an egg, too with tomatoes and sprinkling of cheese. Dust with paprika and season to taste.
  • Bake for 15 minutes or until egg is cooked to your liking.

Let them cool and sprinkle with parsley leafs if you’d like. They are good for lunch box or morning snacks.
